Super Bowl weekend White Chicken Chili recipe

Perhaps you can tell from this week’s obsessive food posts, but we CANNOT wait for this weekend’s big game day – which is also officially an American food holiday. So to get the Super Bowl weekend started off right, here’s our favorite White Chicken Chili. There will not be leftovers.

WHITE CHICKEN CHILI

4 tbsp. olive oil, divided
4 boneless skinless breasts of chicken, cubed
1 large onion, peeled and chopped
4 poblano peppers, seeded and chopped
4 cans of great northern beans, drained and rinsed
2 cloves of garlic, peeled and minced
3 cups chicken broth
OPTIONAL: Cumin powder, chili powder, paprika, cayenne, onion powder, garlic powder, dry or fresh oregano, dry or fresh cilantro, sour cream, shredded cheddar cheese

This chili makes 4-5 meal sized servings of chili, so you’ll need a pretty large pot or dutch oven. Heat over medium-high, add 2 tbsp. of olive oil, and cook your chicken until no longer pink inside. Remove the chicken and put it aside (or into the fridge if making the chili ahead). NOTE: This recipe also works great with a cooked rotisserie chicken from the grocery store or deli, either hot or cold – just shred it up and use it in place of the chicken breasts.

Add the remaining olive oil to the pan and toss in the onion, poblano, beans, and garlic. Cook, stirring frequently, until the beans are breaking apart. This is important because the busted beans are what make the chili taste thick and creamy, so don’t be afraid to keep cooking it down until the mix looks a bit pasty.

Stir in the chicken broth, and whatever spices and herbs you like. We use cumin powder, chili powder, paprika, cayenne, onion powder, garlic powder, dry/fresh oregano, and dry/fresh cilantro.

Now this mix can sit on the stovetop or in a slow cooker on low for up to maybe 3-4 hours. When it’s time to eat, toss the chicken and accumulated juices back into the pot, add more broth if you want it soupier, and heat through. As a serving suggestion, we also like to top each bowl of chili with a dollop of sour cream and a handful of shredded cheddar cheese.
