This brand new dining experience in Norway is going straight on the bucket list. Under is a restaurant located 5 meters below the sea, and it’s just beginning to open for reservations. The menu is set by the chef (meaning there’s nothing to order, everyone eats the same food), and it’s composed of “18 seasonally inspired delicacies.”
Under’s Head Chef Nicolai Ellitsgaard notes, “Just on the other side of our iconic window the ocean is bursting with fresh delicacies from the sea, so the journey from the kitchen to the plate is minimal.” The restaurant website’s FAQ page (here) suggests allowing about 4 HOURS (!!) for the full dining experience.
