Sweater-weather pumpkin muffins

As the air cools and everyone’s thinking about pumpkins, nothing is more satisfying than the warm smell of oven-baked sweets. Here’s our favorite recipe for sweater-weather pumpkin muffins:

3 cups all-purpose flour (white, wheat, or a mix)
1 tablespoon + 2 teaspoons pumpkin pie spice
2 teaspoons baking soda
1 1/2 teaspoons salt
3 cups granulated sugar
1 can (15 oz.) canned pumpkin
4 large eggs
1/2 cup vegetable or canola oil
1/2 cup water or orange juice

Preheat oven to 350 degrees, and line or grease 30 muffin cups. Mix together your dry ingredients – flour, pumpkin pie spice, baking soda and salt – in a large bowl. Mix your wet ingredients in another bowl – sugar, pumpkin, eggs, oil and water/juice. Now add the flour mix to the pumpkin mix and stir until moist. Fill each of the 30 muffin cups about 3/4 full of batter and bake 25-30 minutes.
